Thursday, 3rd November 2022: Aramark chef, Stuart Fildes, has been named Street Food Chef of the Year 2022. With over 20 years of experience, Stuart joined Aramark UK 3 years ago as Group Executive Chef at the University of Hertfordshire.
This year’s competition saw Aramark chefs compete live to produce an innovative menu of dishes to secure that coveted title. They had to create, design and cook a visionary street food dish with two suitable sides showcasing either chicken, plant protein or sustainable seafood that’s encapsulates current food trends.
With a passion for travel, Stuart’s winning dish took inspiration from the famous ‘Nem Lui Hue’ all the way from the city of Hue in Central Vietnam. Stuart impressed the distinguished panel of judges with his ‘Lemongrass Chicken with Green Mango & Papaya Salad’ which consisted of chicken cooked on a fragrant lemongrass stick with Jasmine rice and a Green Mango and Papaya Salad.
This incredible competition is open to all of Aramark’s catering chefs from across the UK and is one of the most popular pillars of Aramark’s robust culinary development programme.
